Memorial Day Weekend



This weekend was filled with frisbee golf, planting flowers, a new church, good food, good company, and the Edmond Jazz Festival, and we still have tomorrow!

A Summer Favorite



This is a recipe we found not too long ago from Williams-Sonoma and it is now one of our most favorite summer dinners.

Pork and Mango Lettuce Wraps

PORK:
1-1.5 lb boneless pork tenderloin, thick cut
Salt and pepper, to taste
1/4 C hoisin sauce
1/4 C soy sauce
1 T Asian sesame oil
optional: fresh onion, chopped
fresh green or red pepper, chopped

WRAPS:
2 T peanut or canola oil
1 jalapeno
3 C roasted pork, cut into strips
1/4 C soy sauce
2 T sugar
3 garlic cloves
1 C cilantro, chopped
8 large iceberg lettuce leaves
1 mango, sliced
1/2 C roasted peanuts
optional: crushed red pepper flakes

For the pork: 450F. Season with S/P. Place fat side up in a roasting pan. Pour 2-3 T of water around pork, add sauces, oil, and veggies, cook for 10-20 minutes and let rest. Slice.

For the wraps: In a large frying pan over med-high heat, warm the oil. Add the jalapeno and saute until softened, about 1 minute. Add pork, stir in soy sauce, sugar, garlic and cook until pork is heated, about 1 minute more. Remove from heat and stir in cilantro. Cut mango. Add peanuts to mixture. Serve with brown rice.


Talk about a tasty meal...you will feel like you are eating a meal from P.F. Changs, but better!

LOST Party

As you may already know, the TV show LOST ended, for good, last Sunday. In order to celebrate and say farewell to our most favorite TV show, Nathan and Tiffany invited us over (as well as another family :) for burgers....YUM!!

Tiffany, of course, wowed us with her LOST themed cupcakes and decor, not to mention the DHARMA beer! I didn't get as many pictures as I wanted to, but here are a few from the first part of the evening.

My First Entry

...We'll see how long it takes Zach to find out I started a blog. (He is not too fond of the blog world; I just want to give it a try) :) Anyways, I just don't know what to do with myself now that I'm done with school and I don't have a full time job! Most days it is just Roscoe and I here trying to find something to do with a little bit of babysitting thrown in here and there.

I have a possible job opportunity at Schools for Healthy Lifestyles, if I get it I will be starting July 1! Until then, here are a few things I want to get done on my break:

-Reorganize the entire kitchen
-Deep clean the entire house
-Paint the front door and maybe the shutters
-Revarnish the coffee table
-Clean out our closet
-Have a garage sale
-Read books for FUN
-Make a few things for some babies that will soon be born ;)
-Have over more company
-Make curtains
-Teach Roscoe more tricks

Well, the list could go on, and does go on, however, that is all I can recall at the moment. Time to go water the garden and play with Roscoe.

Poor thing, he is panting at the back door, better go let him in...
